Dish Name: Methi Ka Aalan
Brief Description: It is a side dish made of Gram flour and Methi leaves (Fenugreek). It can be served with rice or rotis. I am preparing this dish with leftover Aalu-methi ki sabzi. List of Ingredients: Leftover Aalu-methi (1 bowl), Gram flour (3/4th bowl), Curd (1 bowl), Oil (1 tablespoon), Mustard seeds (half teaspoon), Cumin seeds (half teaspoon), Grated Ginger (1 teaspoon), split green-chillies (3-4), Turmeric powder (half teaspoon), and Salt to taste.
Preparation and cooking time: 7-8 minutes
Step by step preparation:
1. Heat 1 tablespoon oil in a Kadhai.
2. Put Mustard seeds and Cumin seeds in it.
3. Once Mustard and Cumin seeds have popped, add ginger, green chillies and turmeric powder and saute.
4. Then churn curd and gram flour in a mixer pot so that a smooth paste is obtained.
5. Add this paste to Kadhai, add some salt and cook until boiled. keep stirring.
6. Now mash the leftover Aalu methi so that it is lump-free.
7. Add this mashed Aalu methi to the kadhai, mix properly and cover and cook for 2 mins. Then serve hot.
